🍋 Lemon babka 🍋

( loaf pan 12x30 cm)

* 3/4 cup cake flour
* 3/4 cup potato flour
* 3/4 cup sugar
* 1/2 cup oil
* 5 eggs
* teaspoon baking powder
* lemon

Lemon glaze:

* half a cup of powdered sugar
* 2 tablespoons lemon juice



🔪 Preparation:

All ingredients should be at room temperature.


Cream the soft butter with sugar using a mixer. Add the eggs one at a time. Add the lemon zest and cottage cheese. You can use ground or unground cottage cheese. If not ground, crush it with a fork or pestle before adding it.


While mixing, add the flour mixed with baking powder. The dough will be thick and it should be thick too.


Transfer to a baking tin lined with baking paper and smooth it out. Place in a preheated oven at 180 degrees and bake for about 60 minutes or longer until a toothpick comes out dry. (If the cake starts to brown on top, cover with aluminum foil.)


When ready, cover with chocolate, icing or sprinkle with powder. Enjoy! The cake stays fresh for a few days ❤️
