馃珢 Fluffy blueberry cake with crumble topping 馃珢

 

馃洅 Ingredients:

(25x35 cm form)
(250 ml cup)

5 eggs
1 and 1/3 cups of sugar
400 ml buttermilk
170 g butter
4 cups flour
2 teaspoons baking powder
300 g blueberries
Crumble: 100 g flour + 50 g butter + 50 g sugar

馃敧 Preparation:

Put the ingredients for the crumble in a bowl, rub them in your hands until crumble is formed

and put in the fridge.

All the ingredients for the cake should be at room temperature.

Mix the eggs with the sugar until white and fluffy for a few minutes. Reduce the mixer speed, add the buttermilk and melted and cooled butter and mix briefly.

Finally, add the flour sifted with the baking powder in several batches. Mix everything together only with a spatula briefly until the ingredients are combined. (The mass does not have to be uniform, it is important that you do not see "dry flour").

Pour the dough onto a baking sheet lined with baking paper, spread evenly, sprinkle with blueberries and crumble.

Bake the cake at 175 degrees until a toothpick comes out dry, about 45 minutes. Sprinkle with icing or frosting when ready. Enjoy!
