Yeast pancakes with blueberries

 

馃洅 Ingredients:

(serving for approx. 25 pieces) (cup 250 ml)

Yeast 35 g
Flour 3 cups + 1 tablespoon for the yeast mixture
Sugar 2 tablespoons + 1 tablespoon for the yeast mixture
Milk 2 cups
Butter 30 g
Pinch of salt
Eggs 2
Blueberries 250-300 g

馃敧 Preparation:

Crumble the yeast into a bowl, add a spoonful of sugar, a spoonful of flour and 3 spoonfuls of warm milk. Mix everything together and leave to rise for about 10 minutes.

Add the remaining ingredients to the risen dough: warm milk, melted or very warm butter, eggs, sugar and salt and mix everything together. Finally, add the flour and mix again. Leave to rise in a warm place for about 45 minutes or until it doubles in volume.

After this time, add the blueberries and mix.

Fry in oil until golden brown, on medium heat for a few minutes on each side.

Remove the finished dough onto a paper towel. Sprinkle with powdered sugar. Enjoy!
