Starter:
Yeast 40 g
Sugar 1 tablespoon
Wheat flour 1 tablespoon
Warm milk 1/2 cup
Dough:
Wheat flour 500 g
Butter 100 g
Sugar 4 tablespoons
Warm milk 1/2 cup
Eggs 1+1 for brushing the rolls before baking
Pinch of salt
Filling:
Custard cooked in 400 ml of milk
Crumble: 50 g wheat flour, 25 g butter, 25 g sugar
🔪 Preparation:
Cook the pudding according to the instructions on the package in a reduced amount of milk to 400 ml. Sweeten as desired. Set aside to cool.
Crumble the yeast into a bowl, add the sugar, flour and milk. Mix everything together, cover with a cloth and set aside to rise in a warm place.
Prepare the dough. Pour the flour, sugar and salt into a bowl. Add the egg, milk, melted and cooled butter and the risen starter. Knead the elastic dough. Transfer to a bowl, cover with a cloth and set aside to rise until doubled in volume.
Transfer the dough to the counter, knead briefly and divide into 12 equal parts. Flatten each part in your hands to a thickness of 1 cm. Make a slight indentation in each piece of dough with the bottom of a glass. Add the cooled pudding to the middle. I also added fresh raspberries to some of the buns.
Brush the edges of the buns with beaten egg. sprinkle with crumble and leave to rise while the oven preheats, about 10-15 minutes.
Transfer the buns to a baking tray lined with baking paper.
Bake at 180 degrees for about 15 minutes. Sprinkle with icing or frost when ready. Enjoy!
